The day of the house
The day of a Cantonese house begins when the steamer lids come off. Dim sum made to order; a pot of tea and a couple of baskets — a morning ritual Cantonese diners have kept for over a century. By afternoon and evening, the fire takes over. Open-flame roast meats are judged by glaze and crackle; seafood banquets by generosity — the table that shows what a kitchen is made of.
The "contemporary Chinese" in the restaurant's own billing is its footnote to itself: the rules stay old, the craft stays old, but the table welcomes the new. On the dim sum sheet, Dubai chocolate mochi sits beside crystal har gow — that is the whole idea in one line.
